Zucchini Spotlight

Today I'm sharing with you one of my favorite veggies I cook with in the summertime. Since summer is hopefully right around the corner and I'll have massive amounts of zucchini at my fingertips. Zucchini is one of my favorite veggies because it's so versatile and your can use it in so many ways. Not to mention that they are chalk full of yummy vitamins and only contain about 15 calories in a 3/4 of a cup. 

Here's a few fun fact's about zucchini that you might have not known. The biggest zucchini to date weighted 65 pounds and was 94 inches long. WOW MAMA! That's a big one. You can fry the flowers and they are considered a delicacy in some countries. Zucchini's are rich in potassium which make them great for people with high blood pressure. They also contain vitamins such as A,C & B6. Before you peel them think twice. Most of the nutrients are in the skins. If you prefer the smaller fruit they will most likely be sweeter and have fewer seeds.
